Overnight Egg Brunch Casserole
This slow cooker breakfast casserole would be great for feeding holiday brunch to a crowd!
We know our readers can't get enough of this Overnight Egg Brunch Casserole recipe, so we decided to whip it up in our test kitchen and add our own special flair. This slow cooker breakfast casserole is made with layers of hash browns, sauteed vegetables, fluffy eggs and gooey cheese. After frying the bacon and chopping up the vegetables, the assembly of this casserole is a breeze.
The great thing about slow cooker breakfast recipes like this one is that everyone's breakfast can be made in one batch. Because the slow cooker can cook such a large amount of food at once, the whole family will be able to sit down around the table and enjoy a warm meal together (no waiting for batches of pancakes or eggs to cook).
And don't even get us started on how good the leftovers are! The original recipe calls for the casserole to be cooked on LOW for 10 hours (or overnight). Ingredients
- 8 strips bacon
- 1 onion, peeled and chopped
- 1 clove of garlic, peeled and minced
- 1 red bell pepper, seeded and chopped
- 1 cup broccoli, chopped
- 1 cup mushrooms, chopped
- 2 (1-pound) bags frozen hash browns
- 1 1/2 cup shredded Cheddar or Cheddar Jack cheese (you can double this amount for more cheesy flavor)
- 12 eggs
- 1 cup 2% milk
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Instructions

Assemble the ingredients.

Cook strips of bacon until crispy. After cooling the bacon on a plate with paper towel, chop it up into ½-inch strips.

Chop up onion, garlic, bell pepper, broccoli and mushrooms.

Saute the five chopped vegetables in a large skillet for 5 minutes, or until slightly tender.

Spray your slow cooker with non-stick cooking spray.

Place one-third of the hashbrowns into the bottom of the slow cooker and season with salt and pepper.

Layer one-third of the vegetables and one-third of the cheese on top of the potatoes.

Repeat these steps until the ingredients are used up, ending with a layer of cheese on top.

In a large bowl, mix together eggs, milk, dill, salt and pepper.

Pour the liquid mixture over the top of the ingredients in the slow cooker.

Place a piece of paper towel beneath the lid of the slow cooker to absorb excess moisture as it cooks.

Cover the slow cooker, and cook on HIGH for 4 ½ hours or LOW for 8-10 hours.

After the time has elapsed, a thermometer inserted in the middle of the bake should read 160 degrees F.

This looks delicious! I am thinking this would be the perfect dinner recipe! Instead of letting it cook overnight, I would put it in the crockpot in the morning, and have an amazing dinner that night! Or, the perfect recipe for Christmas morning, so you don't have to worry about what to have for breakfast.

This is an excellent weekend breakfast. If you plug in the crock pot by 10 pm, breakfast will be ready by 8 am. I am looking forward to making recipe and serving it in a whole wheat wrap with salsa. Yummy.

Do you have to put a paper towel under the slow cooker lid for any kind of recipe that incorporates eggs? I wonder. If so, I never knew that! Good tip there. This breakfast can cook for 8 hours overnight and that is AWESOME for Christmas morning, most noteably. After everything is layered in the crock you then dump the dozen eggs mixture over the top. I bet this smells really good and tastes even better!

So many slow cooker breakfast recipes have a 2-4 hour cook time. How is that breakfast? Am I supposed to get up hours earlier than everyone else to put it in the slow cooker or are we supposed to eat at lunch time and call it breakfast. I don't know, but I really appreciate a breakfast recipe that I can put in my cooker at bedtime and wake up to a delicious meal. This will be a perfect breakfast when we travel in our RV and want to feed our entire camping family.

What could be better than doing all the prep the night before and waking up the breakfast or brunch ready and waiting for you and your family and friends. The veggies could be whatever you have on hand or what your family likes best. Can't go wrong with hash browns and bacon either.

This looks way too nice to be a breakfast. I would have this as a lunch or a light dinner, I would say this is a tasty little number. I reckon I could even trust the other half to rustle this up when I am out or I am busy I don't think he will thank you for this idea but I love the thought of him having something ready for me when i get home with a salad)

I have to agree with Savvyness. I have never, ever thought of cooking eggs in my crock pot, but I am so excited to check this one out because I spend too much time waking up to have a big, hot meal ready for everyone first thing in the morning. Brunch is more my style, and this one fits into my day perfectly. Thanks for being unique!

Oh wow this recipe looks amazing. I'm from the UK and I've never thought thought of using my slow cooker for breakfast before. I'm on a low carbohydrate diet and have been looking for ideas for a quick and easy breakfast. This would be perfect and very healthy. I guess you can cook and then slice-up for the next morning. Does anyone take this to work?

This is the perfect recipe for family overnight gatherings especially around the holidays. Breakfast is my favorite meal and I think this would make a good breakfast dish. The idea that this can all be prepared and cooked overnight. The ingredients are all easy to prepare and blend together for a tasty breakfast dish.

I think I just found a new Christmas morning tradition! It not only sounds good, it looks good too. Festive, almost! Has anyone tried this with egg substitute? Maybe even a mixture of half eggs and half egg substitute? This looks so good, so I definitely would need to find a way to lower the cholesterol. What substitutions have you made? How was it?

Mmm, most of this was good and I know how to make it better next time . . . omit the broccoli. Could be just me but I think when broccoli cooks for so long it sours. Other than that I liked the Casserole and will make it for my family - sans the broccoli! )

Loved this! Egg casseroles always make me a bit nervous because I never know if they're going to be too dry or too runny, but this one was perfect! Loved the addition of veggies too--added a nice variety in flavor.

The real purpose of a slow cooker is to use less pans and preparation...if I did not have to use two other pans to make this I would be fixing every weekend. It looks like a really good dish for my group....

I made this recipe 8/8/13 . I followed the instructions & cooked mine overnite on low for about 9 hours. Mine turned out very mushy & not firm. I added green chiles, mushrooms & turkey sausage. My husband & I didn't care for the mushiness. I wont be making this again. I was disappointed. I prefer the egg casserole baked in a 9x13 pan where you can cut it into squares & serve. Did anyone else have these results?

Maybe the mushrooms made it soggy. They release tons of liquid when cooked.

I right-clicked on the image and then clicked "copy image" and then pasted it into a Mircrosoft Word document. Then it can be printed. You can also enlarge it in Word so you can read it better by grabbing the corners and pulling them out till you have the size you want.
