Ingredients
- 4 medium-sized artichokes
- 1 teaspoon kosher salt (or any salt on hand) (1/4 teaspoon per artichoke)
- 3 to 4 lemons, yielding 8 tablespoons fresh lemon juice (2 tablespoons to each artichoke)
- 2 cup hot water
- Melted butter or olive oil
Instructions

Wash and trim the artichokes cut off approximately one inch off the top and snip the ends of the pointy leaves; cut off the stem to form a flat bottom.

Stand artichokes upright in slow cooker.

Sprinkle each artichoke with 1/4 teaspoon of salt and 2 tablespoons of lemon juice.

Pour two cups of hot water around the bottom of the chokes.

Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours.

Serve with melted butter and lemon juice for dipping.
