Slow Cooker Cabbage Casserole

Ingredients
- 1 medium head of cabbage, shredded
- 1 onion, diced
- 2 potatoes, diced
- 1 (14-ounce) package smoked kielbasa sausage, sliced
- 2 teaspoon garlic powder
- 1 teaspoon dry mustard
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1 (14-1/2-ounce) can fire-roasted diced tomatoes
- 2 tablespoon balsamic vinegar
- 1 cup chicken broth

Lightly spray the insert of a large slow cooker with cooking spray.

Add the cabbage, onion, potatoes and sausage. Season with the garlic powder, dry mustard, salt and pepper.

Stir in the tomatoes, vinegar and 1 cup of the chicken broth, reserve the other cup for later if needed.

Cook on Low for 4-6 hours or on High for 2-3 hours.

Check half way and add some additional chicken broth if needed.

Top with caraway seeds and serve.
