Ingredients
- 1/3 cup low-sodium tomato catsup
- 1/4 cup low sodium soy sauce
- 2 tablespoon honey
- 1 tablespoon finely minced ginger
- 1 tablespoon finely minced garlic
- 1 teaspoon sesame oil
- 1 teaspoon rice wine
- 1 1/2 pound skinless boneless chicken breasts or thighs, or a combination
- 1 cup red or green bell pepper, cut into 1-inch pieces
- 1 tablespoon cornstarch

Spray the insert for a slow cooker with cooking spray.

In a medium bowl, stir together the catsup, soy sauce, honey, ginger, garlic, sesame oil and rice wine.

Cut the chicken into 1-1/2 cubes and add it with the bell peppers to the sauce. Toss to coat. Place into the slow cooker and cover. Cook 4 hours on low.

Remove about 2 Tablespoons of the sauce in the cooker to a small bowl and stir in the cornstarch to make a smooth paste. Stir this back into the cooker and continue to cook, covered for another 15 minutes to thicken the sauce.
