Slow Cooker Hawaiian Chicken

Instructions
What You Need:
- 4 boneless, skinless chicken breasts
- Salt
- 8 slices deli-thin black forest ham (2 per chicken breast)
- 1 (20 oz) can pineapple slices, juice reserved
- 1/3 cup packed brown sugar
- 2 tablespoons lemon juice
- 2 tablespoons low sodium soy sauce
- 1/4 teaspoon ground ginger
- 1/4 cup cornstarch
- 1/4 teaspoon red pepper flakes
Directions:
1. Spray slow cooker with non-stick spray. Lay chicken breasts in the bottom of the crock.
2. Season the chicken breasts with salt.
3. Lay 2 slices of ham over the top of each chicken breast.
4. Layer 2 pineapple rings on top of the ham on each breast.
5. In a bowl, whisk together reserved pineapple juice, brown sugar, lemon juice, soy sauce, ground ginger, cornstarch and red pepper flakes.
6. Pour liquid mixture over the chicken breasts, and set the chicken to cook for 4 to 5 hours on LOW, or 2 1/2 to 3 hours on HIGH.
7. Ladle the sauce in the bottom of the slow cooker over the chicken periodically throughout the cooking process.
8. Cook rice in a sauce pan, and steam broccoli and pea pods in another.
9. Pile a piece of Hawaiian chicken on top of a bed of rice, accompanied by the steamed veggies.
