"This Creamy Mexican Chicken is a favorite budget-friendly meal. And it couldn't be easier! You simply dump the raw chicken, canned corn, salsa, black beans and cream cheese into your slow cooker and then let it cook while you go do other things! We love it served over rice or as a tortilla filling but it also works great with lettuce for a salad bowl and can be used as a baked potato or nachos topping too.
