Autumn Pork Stew

Chilly autumn days require hearty that meals that will satisfy and warm you. If you are searching for a slow cooker pork stew that is delicious enough to make up for even the bitterest fall winds, try this Autumn Pork Stew. A pork roast cooks in the slow cooker for eight hours with root vegetables, spices, and chicken stock until it has reached tender perfection. This flavorful pork stew will soon become an integral part of you fall recipe rotation.

Ingredients

  • 6 medium Yukon Gold potatoes, quartered (optionally peeled)
  • 1 medium yellow onion, cut into chunks
  • 1 pound carrots, peeled and cut into medallions
  • 2 clove garlic, chopped
  • 2 pound boneless pork roast, trimmed
  • 1 3/4 cup chicken stock, preferably homemade
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the potatoes, onion, carrots, and garlic in the slow cooker; top with the pork roast. Pour in the chicken stock. Add the thyme, mustard, salt, and pepper.

  2. Cover and cook on low for 8 hours, as the delicious aroma fills your house.

  3. Remove the roast and let rest before slicing. Serve with the juices and vegetables.
