Ingredients
- 1/2 pound pork tenderloin
- salt and freshly ground pepper, to taste
- 2 tablespoons dry sherry
- 2 tablespoons light or dark brown sugar
- 2 teaspoons freshly grated ginger
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 medium mango, peeled and sliced, half diced, and divided

Insert plastic slow cooker liner bag into slow cooker.

Add the pork to the bottom of the liner. Season with salt and pepper.

Stir together sherry, brown sugar, ginger, thyme, rosemary, and diced mango in a small bowl.
