These Copycat Subway Chicken Enchilada Melts are flavorful, gooey, crunchy and just delicious. Made with shredded chicken, cheese, Fritos chips and sandwich toppings, these slow cooker sandwiches are almost too good for words. This sandwich was inspired by the Subway "Chicken Enchilada Melt" and uses a lot of the same flavors to create the DIY version. Adding Fritos to the top of the sandwich provides the perfect amount of crunch that is balanced by the warm chicken and melty cheese.
