Paleo Slow Cooker Cauliflower "Rice"
Paleo Slow Cooker Cauliflower "Rice" is a great recipe for those keeping a strict paleo diet but who still want to enjoy common and familiar side dishes. Although this side dish recipe is a little different than what you're used to, the flavors are undeniable. If you never knew you could transform cauliflower into rice, you aren't alone -- it's not frequently done. However, when it is, it's absolutely delicious, not to mention a wonderful alternative to plain white or brown rice. Ingredients
- 1 large head cauliflower, trimmed into florets (about 5 cups)
- 1/2 cup unsweetened shredded coconut
- 1 tablespoon olive oil
- 3/4 cup finely chopped onion
- 2 teaspoons finely minced garlic
- 1 to 2 teaspoons sesame oil
- pinch of salt

Use a food processor to pulse cauliflower and coconut until the mixture resembles grains of rice you will need to do this in batches.

In a 12-inch nonstick fry pan, place the olive oil and, over medium high heat cook the onions and garlic until fragrant, about 1 minute. Stir in the cauliflower / coconut mixture and the sesame oil and salt. Toss over medium high heat, stirring and cooking only until the mixture is warm, about 5 minutes.

Use in place of rice to serve with any dish.
