I don't eat much red meat but I love a good pot roast. It just reminds me of Sunday dinner where we all ate around the table. This is a simple recipe and I like the addition of the stock and the red wine. The layer vegetables add flavor as well along with the herbs. Can't wait to make it.

I was wondering if you ever added potatoes to your roast recipe? We use potatoes a lot to round out the meal and make it complete. I love that you use fresh herbs and the red wine and beef stock because just water gives it such a bland taste. You add so much depth with the stock.
