Can I use orange marmalade in place of the apricot jam or maybe some peach preserves? My daughter cannot have apricots. Mongolian beef is something I have always wanted to try, and your recipe is so easy to put together. It seems so simple, I don't know why I haven't tried to make it before now.

Mongolian beef is my husband's favorite thing to order when we get takeout, so I decided to make this for him. I like the red peppers and onions to still be a little crisper like a stir fry, so I added them about halfway through the cooking time. We like our Asian food on the spicy side, so I sliced up a couple of fresh cayenne peppers from my garden and tossed them in.
