This looks amazing! I think with this recipe you really don't need potatoes on the side. I'd go for just those tasty green beans. I think the chicken Cordon bleu has enough substance with the cheese and stuffing in it that you don't really need serve potatoes on the side. This is quite an impressive dish to serve for your dinner date with your significant other.

I have not had Chicken Cordon Blue since I was a teenager many years ago. I want to try this dish right away! How long would it take to cook the chicken if I added a few more pieces of chicken to make about 8 to 10 servings instead of the 4 to 6? I have a large family.

My Mom made this in the crock pot while I was at work yesterday and it came out so moist and tender you could cut the chicken with a fork. We did use stove top chicken stuffing mix. Will definitely keep this one on hand.
