I have always loved the flavors of chile peppers and sausage together - the little bit of spiciness seems to cut through the richness of the meat, and really gives it a bright flavor! If you hate hot stuff, you could dice up some sweet red bell pepper in its place, and the dish would still be delicious. It is so hearty and savory, that I might even serve it for dinner with a light salad.
