Do you ever add some of the lemon zest to your recipe for the pudding? I bet it would add a nice brightness, but I wouldn't want it to take away from the sweetness too much. I love recipes like this because they are a mix of two other recipes, and it gives you a fun take on each dish and a dessert that no one expects.
