I didn't understand the "meatless" part of this recipe's title, since I thought most beans and rice dishes were already meatless. It makes sense now, since many recipes do call for chicken broth or boullion, and some even use rendered pork lard for flavoring. This stuff would be great to roll up into a tortilla for a yummy portable lunch to bring to work!

Sounds wonderful! However, looks like I will need to make a trip to the spice aisle at my grocery store because this recipe requires a whole host of them. Must be the reason why this dish is so darn good! Again, the use of brown rice not white rice. It has a lot more fiber, more healthful, and make it very filling.
