Tomatillo Chicken Soup
Tomatillo Chicken Soup is the perfect recipe for days when you don't have time to do anything but dump and stir. This slow cooker chicken soup is packed with flavor but is impossibly easy to prepare. You only need to combine your prepared ingredients and your work is done. This wonderful homemade chicken soup gets its great color and flavor from chopped tomatillos and jalapenos. You can serve this delicious soup with chopped cilantro for a fresh finish.

Ingredients
- 3 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 pound tomatillos, chopped
- 1 onion, chopped
- 2 jalapenos, seeded and diced
- 3 cloves garlic, minced
- 1 tablespoon cumin
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups chicken stock
- fresh cilantro for garnish
Instructions

Line your crock with a PanSaver Slow Cooker Liner.

Place the boneless skinless chicken, tomatillos, onion, jalapeos, garlic, cumin, salt, pepper, and chicken stock into your slow cooker. Give it a quick stir.

Cook on LOW for 5 to 6 hours or on HIGH 2.5 to 3 hours. Garnish with fresh cilantro when serving.

This soup is really simple to make but looks and sounds so elegant...I can smell it in the air just thinking about it. Tomatillos haven't been much of a staple in my pantry and now I'm wondering why. For the longest time I believed green tomatoes and tomatillos were one in the same until I tried making fried green tomatoes with tomatillos! That was an experience all by itself...and clearly, they are not the same. lol
