These are some really useful tips on how to keep your tomatoes. My tomato plants just took off this summer and I couldn't pick them fast enough! I was looking for a reliable way to keep them for use over the winter and I think that this method is the winner. It might seem time consuming to blanch the tomatoes to remove the skin, but when you are making sauce later on, it will make a BIG difference in the texture if the skin is removed. Don't skip that step! It's also good to know that they will keep their flavour this way for 12 months...not that they would ever last that long in my house! Lol
