- 1 boneless beef chuck pot roast (about 2 pounds)

I am not a huge sweet potato fan. Do you think I can use just regular potatoes in this dish or maybe a mix of potatoes and carrots to get a similar flavor? I want to keep the dish traditional, but used ingredients I know I love to create a dish my whole family will love.
