This is definitely a unique take on the classic shepherds pie. Even though this is made in the slow cooker, it still seems like there are a lot of steps, mainly because of the vegetables. I would probably save this for a weekend recipe, simply because even if I did the vegetables the night before, it still seems like a lot of work for after work.
