I am always looking for new recipes and I love to try to make things that we would likely order from a restaurant. We live rurally now after our exit from California, so takeout is not an option for us, which is why I have to try to find ways to make our favorite dishes at home. I think this recipe looks great and hope to try it soon. Excited to make it very soon!

Yum, yum! When I order Chinese, I almost always order Kung Pao chicken or the Sechuan chicken. So that right there is the reason why I am most likely going to be trying this out for myself. I've never cooked with fish sauce before, so that'll be something new. Her photos look amazing. I think the chicken will be even more amazing!

The red peppers in this dish are nice and sweet in contrast to the flavorful spicy sauce. They add a beautiful color to the mix as well. It says it's spicy, but I would throw a few whole dried Thai chiles in towards the end. That way I can get some really spicy bites, and my husband can just pick them out of his. Broccoli would be a good addition to this if you'd like more veggies.

We really love cashew chicken. I left out the peppers so wasn't worried about the texture of them. The recipe is good even without the peppers

This came out ok. I tend to have issues with fish sauce. I did use it. I think for me the peppers became a tad mushy, so I will lessen the time on those. It was certainly enough for a full meal without any accompaniment. I think beef may also work ok with this. I will give it a try next time.
