Slow Cooker Whole Chicken and Vegetables

Ingredients
- 1 medium onion, sliced
- 1 (5 1/2 - 6 pound) whole chicken
- 2 teaspoons seasoned salt
- 1 teaspoon cracked black pepper
- 4 medium carrots, sliced 1 1/2-inch thick
- 4 small red potatoes, cut in eighths
- 3 celery ribs, sliced 1 1/2-inch thick
Instructions

Place half of sliced onion on bottom of slow cooker crock.

Rinse chicken and pat dry.

Sprinkle all sides with seasoned salt and pepper. Place chicken on top of sliced onions in crock.

Arrange remaining onion, carrots, potatoes and celery around chicken.

Cover slow cooker. Cook on HIGH for 4 hours or LOW for 6 to 8 hours.

Chicken is done when meat temperature registers 170 degrees F in the breast or 180 degrees F in the thickest part of the thigh.

I really want to make this recipe, but we only use boneless, skinless chicken breasts. Do you know how many I should add to take the place of the chicken? I have to agree with Kefra that we may have a crock pot addiction too. I am coming up with all kinds of recipes to add to my collection. I think I have enough to try for the next few months or longer.

This looks so easy and Yummy! I try to keep chopped bags of vegies in the freezer all the time for soups and stews. Carrots, parsnips, rutabagas, celery, potatoes, then all I have to do is grab what's needed and dump it in the pot! Turn it on and dinner will be ready when we come home. :) I think I have a crock pot addiction!! LOL, just kidding! Just like to cook and have fun at it.
