I've made this a couple of times and it's always fabulous. I do use apricot preserves in place of peach apricot. I also use whatever type of chicken I have on hand, i.e. thighs or tenders. Unless you're using large pieces of chicken that can be split, don't anticipate this really serving 8-10 people.

This looks absolutely delicious. I make a similar recipe with pork chops using Russian or even Catalina dressing with BBQ sauce, onions, red peppers and pineapple. The sauce is sweet and savoury. I will definitely try Sticky Russian Chicken. I usually have those simple ingredients in my pantry.
