I do not know anyone that loved coconut more than my Mom did. Whenever I run across any recipe including coconut, I take a gander at it and wonder if it would meet her approval. I think this one would have gotten a thumbs up.

We live in the great state of North Carolina and it is about blueberry picking time. My husband and I always to out to the farm and pick and I usually make jams/jellies and a few pies after I freeze a few but I have to try this blueberry coconut cobbler before anything else.
