Beer Braised Slow Cooker Flank Steak
"This was a meal my husband had a local diner on Long Island one evening while we were out for dinner with the family. He enjoyed it so much, I asked the waiter if he could find out how it was prepared. He got me the whole recipe and to my surprise it was simple to prepare. I made it a few weeks later and home and decided to prepare it in my crockpot. It was so tender and delicious. My husband said it's just as good or even better than the restaurant he first had it in. A hit with the whole family! "

I don't know what it is about beer, but it seems that every time I use it when cooking meat I end up with excellent results. I think the alcohol in it helps break down the fibers in the muscle tissue, and you end up with something that is melt in your mouth tender and moist. The hops and barley give the meat a great depth of flavor. So the next time you are in the kitchen, open up two bottles - one for yourself to enjoy and one for the pot!
