Slow - cooking is by far the best way to prepare a roast, whether it is beef or pork! Gentle braising is the key to making the meat pull - apart tender. A great choice for a family Sunday dinner! I have been disappointed in the past when I bought a nice cut of meat like this and it ended up dry and stringy in the oven.
