I don't quite understand how this is a vegetarian recipe if it calls for chicken broth as the sauce base. I would use a vegetable broth or a mushroom broth instead. Nonetheless, this is a great Asian style recipe for summer since it is chock full of fresh veggies and is much lighter than most stir fried noodle dishes.
