Instant Pot Pad Thai
"This Instant Pot Pad Thai is your favorite flavorful shrimp pad thai that’s easy to make using an Instant Pot. Try it once and you’ll make it again and again… This is an Instant Pot variation on our classic Chicken Pad Thai and Shrimp Pad Thai recipes. All you need to do is give the ingredients a sauté in the Instant Pot before turning on the pressure cooking. You can also substitute tofu for shrimp to make it vegetarian, or use chicken instead."

- 8 ounces Thai rice noodles
- 1 pound raw shrimp
- 4 tablespoons vegetable oil
- 2 cloves garlic
- 1 cup brown sugar
- 3 large eggs
- 3 tablespoons rice vinegar
- 3 tablespoons fish sauce
- 2 tablespoons soy sauce
- 4 green onions, chopped
- 2 carrots, sliced into thin strips
- 2 cups bean sprouts

Unfortunately, I still do not own a pressure cooker, (It's on my wish list for Christmas or birthday) but I was able to make this dish using a big nonstick skillet. It turned out really tasty, but a little on the sweet side. Next time i'll add a couple of dried hot chiles when sauting the vegetables for a little more heat!
