The trick to this dish is the zucchini, believe it or not. I may be one of the only people who did not know this about the popular veggie- that it cooks down into something that resembles a creamy sauce without having to add any cream or oils. Woah! I am totally on board with this. I am trying to eat more healthy. This dish is just the thing I can make to make my calories stretch further. I appreciate this recipe!
