Do you use the diced tomatoes with the seasonings, or just plain diced tomatoes? I like the ones with oregano and basil, but if this recipe just calls for plain tomatoes, I think I will go with fresh since you went to the trouble of smashing garlic and cutting up a fresh peach. I think it will give it a more authentic flavor.
