Oh wow, this recipe sounds so delicious. I want to try it now. I am surprised that you used lemon in this dish. Most of the pork recipes I come across use apple or possibly orange, but never lemon. So, this is a refreshing difference that I am happy to try. Do you make extra sauce for the finish, or do you reserve some of the original ketchup mixture for when the chops are done cooking?
