How easy is this Mississippi chicken, am I right? I can put this on in the morning before I start my day and literally forget about it until dinner. It will let me know when it is getting done by the tantalizing smells it emits in the evening. Such a quick and easy dinner for busy weeknights.

When I first saw this recipe, I thought that using a stick of butter was a little overkill. But seeing as it makes about 3 pounds of this stuff, it really isn't that much. I love the kick and acidity of the pepperoncini peppers, and will probably add about twice the amount next time. This stuff is great on top of a salad for lunch too!
