Slow Cooker Broccoli, Stilton and Potato Soup
"Only 5 ingredients, and easy to make in the slow cooker, this simple vegetarian soup is packed with flavor! This is my take on the UK classic broccoli stilton soup with a little extra potato to make it economical and filling. This is a real treat for blue cheese lovers, and you substitute your favorite blue cheese to make this if stilton is not easily available. I did not know what slilton was until I read the recipe. It is blue cheese. I have never made anything with blue cheese even though I sometimes order it on a burger when I am out. Now is the time to change that. I love soup and can eat it all year. I like the fact that this recipe does not use milk, just broth. This will go on my list. I work from home so I need something I can make for a few days and just heat up. Thank you.

I have seen a lot of broccoli cheese soup recipes over the years, many of which can use up to 2 cups of cheese plus the addition of cream. Since a very strong flavored cheese is used, you only need 8 ounces in this one, making it much lower in fat and calories!
