Cuban Shredded Beef Stew
"This is a slow cooker recipe for Ropa Vieja: Cuba's famously delicious shredded beef stew with tomatoes, peppers and spices. Ropa Vieja is the national dish of Cuba. It's traditionally served with black beans, rice and fried plantains. This stew takes 15 minutes of prep and 6 hours in the slow cooker. Here's what you need: beef, carrots, peppers, onions, garlic, wine, tomatoes, chicken broth, olives and spices. Garnish with cilantro and lime, if you like."

Even though I don't like onion and peppers, I do cook with them, and this looks delicious! Can't you imagine how wonderful this smells when it's cooking? I will definitely make this (and then pick out the onions and pepper). I can't decide if I'll serve it with mashed potatoes or rice.
