The tomato sauce and the beef broth de-glazing is something that I do not normally do with my beef stew recipes. This is different for me. I imagine the tomato sauce adds a nice subtle sweetness to the stew. One thing I learned is that you should not try to cut corners by not flouring and browning the stew meat. It is essential to have the correct end result!

This looks delicious. I use a similar recipe and also add bay leaf. I find I can use cheaper and tougher cuts of beef . The meat comes out very tender and almost falls apart, much more tender than using a stove top or oven method. You can also use other vegetables like sweet potatoes.
