So here is a long-standing question I have in my head for like, forever. Why do I have to use Minute Rice? I do not like that kind of rice. It says that the Minute Rice works best, but I want to know why! Aside from that, I could totally get into this dish, adding it to my weekly rotation for the family. Everything all in one dish. I think fresh carrots are a great addition that I could throw in the pot, too, since they are sweet naturally.

Instant rice has been milled down to white rice then it is fully cooked and dehydrated, that is why it does not have a lot of nutritional value, does not taste as good and only takes a short time to cook. You could substitute another rice but you would have to either partially cook it first or adjust your cooking time for the dish because it takes a lot longer to cook than instant rice.

Would sugar-free 7 up work in this dish? I am diabetic too, so I would love to try it, but I do have to watch the carbs, but I am not so sure that soda with sweetener works with chicken. I am a rookie at using soda with meat dishes. I have only used dark cola in beef.

I would love to make this but I am curious as to how sweet it really is? We have a diabetic in our family and have to watch the sugar and carbs. I guess you could use sugar free 7 Up? Well, there is my solution...lol. Making a list of ingredients...this is what's for supper next week!
