Do you have a preference for the type of apple you use to make this recipe with because I think Granny Smiths would hold up well and keep some firmness here instead? I like a crunchier apple, so I think the tartness and the firmness of the apple both would work great for your recipe. I know I love that you can use this for breakfast. I really need to add some new recipes to my menu's and this one sounds amazing.
