I am little nervous about all the garlic. I think I will cut it down to one or a half a clove for each potato. Do you think it will still have a decent flavor if I cut it down that far? My husband is not a fan of garlic, but I am, so sometimes a compromise is in order. I love your ingredients and instructions. They are easy to follow.

A really nice accompaniment to a barbecue or, as in our case, a friends and family brunch over the weekend. Those garlic slivers do the most wonderful things to the potatoes and I put little salt with the garlic in the slits as well which was also really tasty. Because I was going the extra mile for the guests coming to the brunch I did a few flavored sour cream and cream cheese toppings but even just with sour cream or cream cheese the potatoes would still have been delicious.
