    Keeping this recipe on file. Dont you just hate it when in the middle of cooking you discover you dont have an ingredient you need? Even though I really try to keep my panty stocked with can goods, I have been known to run out of evaporated milk. This is a good save.

    Glad I happened by this recipe. My son is a vegan and sometimes it is really difficult to cook for him when he visits. I often tell him to send me some of his favorite recipes so that I can be prepared but he has not so far. This recipe is a good starting point in my recipe collection.

    This is a very clever recipe and a genuinely brilliant invention to help vegan cooks. I've not found a way to replace evaporated milk in recipes yet and this should work very well. My first use for this will be to whip it into vegan jelly/jello to make a quick and easy fruit mousse.
