I think the whole premise behind this being a healthy swap out recipe, is that you are using nutrient packed sweet potatoes that are baked, rather than fried corn chips. Also, since you are loading them up with lean proteins and veggies, you don't have to use as much cheese as you normally would for a nachos appetizer.

I don't think this would qualify as a health dish, do you? I am supposed to eat more sweet potatoes, but I am not a fan, so I was thinking that this would be a great way to get me started, but I guess the toppings would defeat the purpose unless I used low-fat cheese and sour cream, but I love your idea of topping them like a baked potato. It sounds so delicious, I cannot wait to make them and see what I think.
