I love zucchini because it is such a versatile veggie. You can use it in almost any dish, and it takes on the flavor of the other foods instead of retaining a flavor of it's own. I like that you use the same ingredients that you might find in cabbage rolls and added cheese. This is almost identical to my husbands red peppers and rice.
