I don't know about you, but in my neck of the woods a chuck roast ain't exactly cheap! I am always searching for what is considered a good substitution. Stew meat is not quite right. Do you have any tips for cooking the broccoli and onion with the dish? I really love the flavor when it gets through the veggies and into the meat. I feel that making it this way will give it the roasted onion flavor, but not throughout the whole dish. I just don't want it to feel like an afterthought because of how good the caramelized onion tastes.
