I used to go to a local breakfast diner, which featured vegetarian breakfast fare, and I was always a big fan of their Greek omelet. I imagine this would taste much like it since it uses many of the same ingredients and flavors. I appreciate that the recipe can easily be halved, to serve 2 - 3.

I love to make egg casseroles. I have to eat breakfast and these make ahead dishes are perfect. The combination of all the ingredients really makes it inviting, I prefer feta cheese since I don't have a reaction to goat's milk like cows milk so this looks really yummy. In addition spinach is one of my favorite vegetables. Can't wait to make it.

This sounds so nice. Eggs are one of my favourite foods, they are just packed with everything you need and are so simple to work with, I and a fan of any egg recipe, I just can't believe you can use eggs in a slow cooker, I would of never thought it! Does it stick or is there a special way of cooking then in it?
