Ingredients

  • 6 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup milk
  • 1 cup Greek yogurt
  • 1 teaspoon thyme
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup diced mushrooms
  • 1 cup shredded pepper jack cheese
  • 1 cup (packed) baby spinach
  • 1 cup ham, diced

Instructions

  1. In a bowl, whisk the eggs, salt, pepper, milk, yogurt, thyme, onion powder, garlic powder together until smooth.

  2. Stir in the mushrooms, spinach, cheese, and ham.

  3. Spray KitchenAid 6-Quart Slow Cooker with non-stick cooking spray.

  4. Pour eggs mixture into the bottom of slow cooker.

  5. Cover and cook on HIGH for 90 minutes-2 hours. Eggs should be set.

  6. Slice and serve for breakfast or dinner.

I never would have thought of Greek yogurt in a breakfast casserole, but here it is. Spinach is so healthy for you, too, and this is a way to kind of ease the family into trying something yummy that is actually made with spinach- I believe the yogurt will add a tang and sweetness to it.

When the picture for this recipe caught my eye, I first thought it was a spinach lasagna with cream sauce. Then I read the ingredients for this flavorful breakfast casserole and knew that I had to try it. The use of greek yogurt makes it rich and creamy, without adding a ton of fat! All the ingredients are in 1 cup or 1 tsp. increments (besides the eggs) so it is very easy to remember how to make it in the future.

I love this idea! This would be perfect to throw together before church on Sunday because it would be waiting for you right when mass is over! I'm definitely going to try it this weekend for my family. Seems like a great way to get them to eat some extra greens, too )

Why haven't I hung out at this site before now? It has so many interesting recipes on it. I make a version of this casserole for breakfast in a skillet. This is so much easier as you can just leave it to cook then take it to work the next day. In fact you can put it in the fridge and take portions of it to work for a few days and that is just what I am going to do. Ps...I love onion powder, I've been using it lately. It really makes dishes much more tasty.
