My crockpot lives on my kitchen counter since it has been so hot this summer. This is definitely a recipe to cook for dinner. I would add some frozen cut vegetable and replace the ham with chicken.

I love slow cooker egg recipes! They are so easy to make, and there are tons of options for what to add in with them. This recipe looks really easy and delicious. I would make this for dinner, just put everything in the crockpot in the morning and have an amazing dinner waiting when I get home. You could make this with bacon or sausage instead of the ham, and it would be great!

This recipe looks mouth wateringly good! All my favourite things in one pot! If you had left over boiled potatoes in the fridge could you use that instead of the frozen potatoes? I've never seen them in the frozen section in Ireland. This would be a great way as well to use up the left over ham at Christmas!

I love this recipe. I like to add a can of rotel sometimes to kick it up a notch and give it some kick. Sometimes, it is just what you need when you have a busy day planned for the weekend. It will fuel you to clean out the attic, go for a hike, or play a game of football with some friends.

I love hearty breakfast casseroles for dinner! Hash browns, ham, eggs, and cheese are such comfort food for holidays or cold winter nights or mornings. I will make something like this for Christmas Day, but will make it again for weeknight dinners. I like the everything- in- one -slow cooker goodness of breakfast casseroles.

I am always looking for what I call "church lady" recipes and this looks like a winner. Our church serves breakfast before church and I am willing to bet this will be a hit! I think that, I too, will add broccoli to give it an extra punch. Will be making this for breakfast before our Christmas Day service this year.
