This is a cooking variation of a Frittata, an Italian Omelet. I have been eating them since before WW11 and had them many times in Milano. The only new thing here is the use of a Slow Cooker. The consistency of a cooked egg is a function of how fast it is cooked. I have done Frittatas for years over very low heat on the stove top where it takes at least an hour for the Eggs to Set. I will try a Frittata in a Slow Cooker, it should be quite good.
