What a different kind of shredded chicken sandwich! I have never heard of this cream cheese and apricot preserves in the shredded chicken. I would be willing to give this a try. It looks like it makes enough to serve 8. You could double this recipe for a pot luck, easily. It is fairly inexpensive to make.
