Well, whatever kind of bacon you do decide to use, please don't use turkey bacon. NO offense to turkey bacon eaters, as I have had my time consuming this bacon. But not with this delicious dish! I think it needs ALL that flavor! I vote for the cherrywood smoked or the applewood smoked.

I agree with Helga Pataki that you got my attention when you said bacon smothered too. Do you have any preference on the type of bacon you use in this dish? Some people mention to use thick, pepper bacon while others say thick, applewood smoked is better, and still others just say any bacon will do. Personally, I love all bacon.
