There goes my diet! This recipe reminds me of a dish from my favorite Mexican eatery when I was growing up. Literally, I could not eat enough of it as a child. Top it with some sour cream and diced avocado and you have pure pleasure for a meal. It is totally a Mexican comfort food!

This recipe sounds delicious and easy, and it is! Poblanos really are not hot peppers, so if you want heat add some jalapenos or green chilis. The amount of liquid that cooks out of the chicken depends on how much broth or liquid additive is used during processing. If you can find organic chicken it wont have anything added, and youll need to watch the pot and maybe add a bit of broth or water. Also, I think poblanos are typically peeled. The skins are very thick and waxy, and can be tough.
