Does the parchment paper just make it easier to get the cake out of the crock pot, or does it have other purposes as well? I love red velvet cake too, so this would be such a great dessert to have with the family. I know my mom would love to have one of these for a nice dessert one night, so I just may make two.

That's my concern too msdeb21 - my crock is quite large too so I am thinking it will be too thinly spread out. I guess you have to try before you know for sure!

I don't remember ever making a cake in my slow cooker, but my new favorite cake is red velvet, so I'm dying to try it. Can anyone tell me how the texture of a slow cooker cake tastes? Does it stay moist enough? I would be nervous that it would be dry around the edges but not done in the middle.
